Chard’s Great Moment

In my garden, this is the time to plant Swiss chard. It grows slowly in summer heat and gets a new lease on life in the fall, which is when I start eating it.  It goes dormant for the winter, and then in spring it emerges again and gradually progresses to making enormous leaves over a foot long.  These early spring leaves are very thick and meaty, and have a taste that has the umami elements of meat, but is mild and clean.  These early spring leaves are the ones that I eat, in huge quantities.  They are great cooked, and this is the only time of year that I love chard as a salad green. As soon as the plant starts to bolt to seed, the leaves of the elongating stalk acquire a rather dreadful dirty taste.  Interestingly, the large thick leaves at the base retain their mild delicious flavor for a while, so once the central stalk starts to form, you still have a week or two to collect leaves.  Then the chard season is over, and in my yard the rest is cut and goes to the goat.  When the last chard plant has been cut, I know it is time to plant more for the following fall and spring. ‘

So plan ahead, plant now, and love your chard in its best season.

A Grand Mess of Greens

I love the various vegetables that the seasons offer me, and for the most part prefer to eat what my environment is offering me fresh that day. I do freeze greens mixtures, though, so that I never run short and have them all winter. Recently I came across a forager’s description of his “56 species calzone” and it made me want to count up the number of species in the large batch of cooked seasoned greens for the freezer  that I’m working on today.

The main components: chard, dock, lambs-quarters, spinach, nettles

Seasonings and minor components: mulberry leaves, hops shoots, lettuce ( about to bolt,) dandelion,  scorzonera, salsify, sunflower, green onion, young leeks, elephant garlic, corn poppies, young grape leaves, marjoram, mint, fennel, mustard, cattail shoots, pea vines, broccoli leaves,  arugula, sow thistle, wild lettuce

Sauteed separately and added: chopped broccoli stems, grape leaves, green garlic

So, 30 species, a thoroughly respectable count for an average early summer morning,  and a potential treasure on winter days when I need to be flooded with the antioxidants of summer. In general I blanch the bulk greens in a fairly small amount of water which I later drink or make soup from, saute the chopped alliums and seasonings, then combine all and saute together for five-ten minutes or until the flavors have blended.

The true Cretan diet, the one that nourished some of the healthiest and longest-lived people in the world, was based on huge numbers of wild mountainside greens. It’s said that over 300 edible greens grow on Crete, and the average citizen can recognize over a hundred, making my 30 seem limited. But be assured that if you can learn to recognize ten of your local edible weeds and know when to harvest them and how to prepare them, your health and table will improve.  I’ve been tracking the preferences of a vegetable-despising friend, and he will eat greens, sometimes even second helpings, if they don’t look like greens on the plate. An example is the horta egg cake that I make often. He will even eat plain greens if they have a sweet component and a bit of texture, and an easy way to provide this is to douse them in the Quasi-Korean Sauce that I always have in the refrigerator and put a handful of roasted peanuts on top. If you eat bread, toasted sourdough bread crumbs provide delicious crunch on greens sautéed with garlic and chile flakes.
Be aware that greens have a remarkable capacity to absorb and mute flavors, and may need more seasoning than you think. Salt seems to disappear into them, and enough seasoning may be key to getting your loved ones to eat them and even like them. So keep tasting and adjusting until the flavor is right.

The Plant That I Can’t Do Without

If I were a poet, I would write a hymn to alfalfa.  This workhorse plant is now all over my small property, improving soil and feeding the animals and indirectly feeding me.  For the first couple of years I labored fruitlessly to try to grow enough grass or clover to make a picnic circle, but ultimately I gave up and seeded the area with alfalfa.  What a gain in utility.  Alfalfa thrives in my alkaline soil. Its roots are reported to go down as much as 30 feet deep, and it is fairly drought resistant.  It is a bit sparse the first year but then fills out nicely. It fixes nitrogen and improves the soil. Early in the spring, usually by mid-March in my area, the vibrant green leaves are forming clumps.  It is a remarkably nutritious green, however I don’t usually eat it myself, although I will clip a few tender leaves off the tips and put them in cooked greens mixtures.  Chickens love fresh alfalfa, and it is quite astounding how much of it they will eat. Of course, this is providing all sorts of nutrients and greatly increasing the beta-carotene and omega-3 fatty acids in the egg yolks.  The yolks are beautifully vibrant orange. I grab handfuls of stems and cut them close to the ground with scissors, then go to the chicken pens and cut the stems into lengths 1 to 2 inches long, to make the plant easier for the hens to eat.  They start jumping against the door as soon as they see the alfalfa coming.   My goat relishes a handful of fresh alfalfa as a snack, although mostly she eats dried alfalfa hay.  I have little patches of alfalfa all over the yard now, wherever I had a bare space to fill, and I let at least one patch go to flower for the pleasure of seeing the bees mob the blue-purple blossoms.  I would estimate that each clump is cut four to six times between March and October.

I still wish that I had a lush smooth clover lawn to picnic on; alfalfa is clumpy and by the end of the season it is stiff with all the stems that you cut. You can’t sit right down on it.   But a large sheepskin in between you and the alfalfa makes it a much more comfortable resting place, and it is far more useful and durable than clover. Currently I’m experimenting with planting fruiting trees and berries into the alfalfa patches to see how they coexist. My hope is that the alfalfa will provide some nitrogen for the trees. I hope to report back in a year or two.

If I think about my property as a factory, alfalfa is mining the nutrients from the subsoil, combining them with water, carbon dioxide, and sunlight to make edible food, and transporting the food to the general marketplace at the soil surface. The chickens are eating from the market, breaking down the 16-carbon omega-3 fatty acids found in plants, and re-forming them into 18 carbon omega-3s that people can readily utilize, as well as making proteins and concentrating caratinoids and other nutrients. They contribute eggs and sometimes meat back to the common marketplace, where I “buy” the foody products with my labor and feed input, and happily devour them. It’s a beautiful chain.

These delicious eggs can be thought of as little bombs full of all the nutrients in alfalfa. But they are much easier for people to eat.

Animals, Waste, and the Urban Homestead

Many years ago now, in one of my earliest blog posts ( hard to imagine that I’ve been doing this for eight years now,) I posted the picture above of a carrot from my hard soil, because I thought it was funny and I had little else to talk about that day. Now, I think that my ardent carrot is part of a much bigger picture, and that picture is the ugly landscape of food waste.
Globally, unbelievable amounts of food are wasted, enough to feed a lot of hungry people, and you can read about that and about what one lively activist is doing about it in this article.
My own interest in the subject is smaller and more local. What can be done to reduce waste around our homes and neighborhoods? Start with the carrot above, and with imperfect produce in general. Are you willing to buy it and eat it? If your favorite grower at the farmer’s market sold imperfect stuff at a somewhat reduced price, would you buy it? Let them know.
When you are the grower, the task can be more satisfying, and small livestock can help. Eat what you can yourself, and share with others. People have been so market-conditioned to demand perfect produce that I can end up giving my friends the most perfect specimens and eating the imperfects myself. Get yourself a good nose-to-tail vegetable cookbook to help you eat and like the “nasty bits” of your veggies. Then look at what’s left and who will eat it, because a lot of it isn’t ready for the compost yet.

Chickens are your best friends when it comes to reducing waste. They will eat and relish greens in huge quantities, and will eat carrots, winter squash, and other chunky things if they’re cooked soft or ground in the Cuisinart. They love the residue out of the juicer, and will dispose of most of your table scraps if they are chopped finely. Personally I do not limit my chickens to a vegetarian diet because chickens are among the most profoundly omnivorous animals around, along with pigs and we ourselves. Any arguments that feeding them “garbage” is inhumane are absurd when said “garbage” was on my own plate and would have gone down my own gullet if my appetite had lasted a bit longer. They scratch over, poop on, and compost what they don’t eat, providing you with increased bounty down the road. I have read the argument that feeding them in this informal way malnourishes them, and can only reply that as long as extra calcium is supplied, my little flock shows admirable vigor and my hens lay industriously through age 4. A good laying pellet is available to them free-choice.

Goats occupy a different place in the waste-eating structure. Contrary to general belief they are fussy eaters and will nose at and play with anything but will only eat things that are choice in goat terms.  Goat treats include anything that’s woody and fresh, which is why you don’t keep them loose in your yard: all trees and shrubs will be killed in short order. It is also why they effortlessly absorb things that you have no other use for, such as rose prunings (unsprayed, of course.) My goat loves rose trimmings, corn stalks, carrots, pumpkins, celery and other things that the chickens have no use for, eats all my fruit tree trimmings and some excess fruit, gnaws every edible bit off broccoli stems and other large coarse plants that are otherwise hard to dispo, and will eat some large coarse weeds but only the ones that she personally selects. Amazingly, she rejects kale, lambs-quarters, and other things that I consider delicious. We do have a major trash tree in my area, the Siberian elm, and she adores them, so I cut down the ones that are growing where I don’t want them and leave the stumps in place, coppicing them for future goat food. She also eats a lot of expensive alfalfa, so believe me when I say that there is no such thing as a free goat. On the contrary.

Pigs are among my favorite animals, and throughout the third world they are prized for turning waste into human food.  I wish that I could recommend them for the urban homestead, but they smell too bad when kept in small areas and get too big. A full-grown hog of breeding age is practically the size of a dining room table but stronger and more determined. Urban Farm Online has a good brief summary of why  they don’t recommend pigs. I have heard it suggested that the much smaller Vietnamese pig might be good for urban bacon, but I don’t know anything about that and don’t know if anybody has tried it. If it could be made to work, it could be interesting.

I would not want any of the above to be taken as saying that you can feed animals free on household scraps. If you have animals, you can plan to spend plenty of money on feed. You will also spend time learning to care for them, and then attending to their daily needs. But they will utilize some garden and kitchen leavings and supply you with a nice end product.
